They believe theyve produced a junmai daiginjo that spotlights the deep, citrus like acidity Miyamanishiki rice has to offer. Still, this sake is well balanced and easy to drink. It is nakadori sake, captured during the middle of pressing, which is the best quality. Despite the work that went into it, it tastes effortlessly elegant.
