Izumiryu Yahiko - Junmai Ginjo Isehikari Toyo Bijin “Okarakuchi”The water used to brew this sake comes from Niigatas venerated Mount Yahiko, and is known for being very soft. Such soft water creates exceptionally clean tasting sake that feels light and silky. Subtle umami provides depth, like crystal clear water pooling at the bottom of a spring. This junmai ginjo is one of the most approachable among dry styles. Its delicate flavor pairs beautifully with sushi, sashimi and white fish.
